Thread for SOF boats needs to be strong and resistant to breakage. It might seem that these two requirements are the same, but they are not. Monofilament fishing line can be very strong, but is fragile when it comes to breakage. A nick in the line (from rubbing across a rock or shell) can lead to catestrophic failure. Multifilament lines are much less prone to breakage.
One widely available thread for sewing these craft is waxed dental floss. It resists forming inadvertant knots, is constructed of very long strands, and is moderately resistant to friction. It ties well, and knots can be sealed with application of a little heat.
